Kale Salad, with Dates, Pomegranate and shaved parmesan

Ingredients
  1. 1 bunch of Kale
  2. 1 or 2 sweet onions, cut in half, then thinly sliced
  3. 5 tot 6 medjool dates, chopped
  4. 1 pomegranate, seeded
  5. Shaved parmesan cheese
  6. Optional: roasted walnuts
Dressing
  1. Good tasting olive oil
  2. Fresh lemon juice
  3. Preferably white balsamic vinegar, but if you won't have this one, use a bit more lemon juice and a tiny bit of normal balsamic vinegar
  4. Salt and Pepper
  5. Mix together: olive oil, lemon juice and vinegar. shake it. (you may add 2 tbs of water also, or some fresh orange juice can also help to dilute the dressing)
Instructions
  1. Slice onions and sauté in some coconut oil, until soft and medium brown, set aside to cool.
  2. Tear of Kale leaves and chop kale.
  3. Mix together: olive oil, lemon juice and vinegar. shake it. (you may add 2 tbs of water also, or some fresh orange juice can also help to dilute the dressing)
  4. Add Kale in bowl and add dressing, Salt and Pepper, massage and squeeze into the kale to soften the kale.
  5. Chop dates, add to kale,
  6. Add pomegranate seeds
  7. Mix it all together, and taste, add more dressing, S/P if needed
  8. Serve on a plate, sprinkle with shaved parmesan and/or roasted chopped walnuts
  9. If you have an avocado...add this too.
Notes
  1. Note: Raw Kale needs lots of moisture from the dressing and the acid from the lemon juice/vinegar softens the kale. You have to decide your self how much dressing you like to add. Some are ok with a dryer salad, others like it more juicier.
