Lentil Salad with spinach, yoghurt, fresh basil and walnuts

Ingredients
  1. 1 cup dried Puy lentils (these are the smaller french ones)
  2. 2-3 cups soft baby spinach, (get rid of big stems and tear big leaves)
  3. 2 cups fresh basil, thinly sliced with a sharp knife (try not to bruise them )
  4. 2 tbs of fresh parsley, chopped
  5. 1 cup greek yoghurt
  6. Some fresh lemon juice
  7. 1 clove garlic, minced
  8. A good quality extra virgin olive oil
  9. Freshly grounded salt and pepper
  10. 1/2 cup walnuts, roasted and chopped
Instructions
  1. Preferably prepare lentils in advance.
  2. You may soak the lentils overnight or for 4- 6 hours. Soaking legumes is a smart thing to do, since it eliminates the so called phytic acids. But in case of time limit, you can just start cooking the lentils, about 20 min, taste one piece of lentil to test the right tenderness.
  3. Rinse and drain and allow to cool for at least 1/2 hour. Lentils should be dry enough before using.
  4. Place lentils in a salad bowl,
  5. Add the yoghurt, freshly squeezed lemon juice, salt, pepper, garlic, and a good amount of olive oil.
  6. Mix thoroughly.
  7. Add spinach, basil, and parsley, gently fold and mix.
  8. Add some walnuts, but leave some for topping.
You can serve this salad in different ways
  1. In a salad bowl, with toppings like walnuts and shaved parmezan
  2. On toasted bread, spread with some avocado, topped with lentilsalad, and parmesan cheese..sooo yummy!
  3. On a rice cracker, some avocado, lentil salad, parmesan cheese.

    Wowie!!! This spinach salad blows my mind and senses with amazingness. An absolute meal in itself. Utterly satisfying. Gentle. Naturally creamy. And of course when my little Skinny Bean can’t get enough of something ‘green’ I’m an immediate fan! Thank you Yvette!
