Puy-linzen salade met spinazie, basilicum en griekse yoghurt

Ingredients
- 1 kop gedroogde Puy-linzen dit zijn de kleinere Franse linzen
- 200-300 gram zachte babyspinazie (verwijder grote stelen)
- 2 ruime kop verse basilicum in dunne plakjes gesneden met een scherp mes (probeer de blaadjes niet te kneuzen)
- 1/2 kopje verse peterselie gehakt
- 1 kopje Griekse yoghurt
- 1-2 el vers citroensap
- 1 teentje knoflook heel fijn gehakt
- flinke scheut Een extra vierge olijfolie van goede kwaliteit
- Versgemalen peper en zout
- 1/2 kopje walnoten geroosterd en gehakt
Instructions
- Bereid evt dag of paar uur van te voren. kook de linzen tot ze gaar zijn, maar niet papgaar. giet af en laat afkoelen
- Leg de linzen in een grote kom,
- Voeg de yoghurt, versgeperst citroensap, zout, peper, knoflook en een flinke hoeveelheid olijfolie toe.
- Meng goed.
- Voeg spinazie, basilicum en peterselie toe, en meng dan voorzichtig.
- Voeg een paar walnoten toe, maar bewaar ook wat voor de garnering.
Je kunt deze salade op verschillende manieren uitserveren
- Bijvoorbeeld in een slakom, met walnoten en Parmezaanse kaas
- Op geroosterd brood, met wat avocado, de linzensalade en Parmezaanse kaas.. Zooo lekker!
- Op een rijstwafel, met avocado, linzensalade, en Parmezaanse kaas.

Lentil Salad with spinach, yoghurt, fresh basil and walnuts (English)
One of my favorite dishes!
Calories:
Ingredients
- 1 cup dried Puy lentils these are the smaller french ones
- 2-3 cups soft baby spinach (get rid of big stems and tear big leaves)
- 2 cups fresh basil thinly sliced with a sharp knife (try not to bruise them )
- 2 tbs of fresh parsley chopped
- 1 cup greek yoghurt
- Some fresh lemon juice
- 1 clove garlic minced
- A good quality extra virgin olive oil
- Freshly grounded salt and pepper
- 1/2 cup walnuts roasted and chopped
Instructions
- Preferably prepare lentils in advance.
- You may soak the lentils overnight or for 4- 6 hours. Soaking legumes is a smart thing to do, since it eliminates the so called phytic acids. But in case of time limit, you can just start cooking the lentils, about 20 min, taste one piece of lentil to test the right tenderness.
- Rinse and drain and allow to cool for at least 1/2 hour. Lentils should be dry enough before using.
- Place lentils in a salad bowl,
- Add the yoghurt, freshly squeezed lemon juice, salt, pepper, garlic, and a good amount of olive oil.
- Mix thoroughly.
- Add spinach, basil, and parsley, gently fold and mix.
- Add some walnuts, but leave some for topping.
You can serve this salad in different ways
- In a salad bowl, with toppings like walnuts and shaved parmezan
- On toasted bread, spread with some avocado, topped with lentilsalad, and parmesan cheese..sooo yummy!
- On a rice cracker, some avocado, lentil salad, parmesan cheese.
